Mixed Greens with CDO Holiday Ham, Candied Walnuts, Pears and Blue Cheese Croutons


1 tbsp. apple cider vinegar  
½ tsp. Dijon mustard  
3 tbsps. olive oil  
freshly cracked black pepper    
1 tsp. crumbled blue cheese  
1 piece white bread, diced into crouton-sizes  
2 tbsps. walnuts  
½ cup white sugar  
1 cup CDO Holiday Ham, diced  
1 ½ cups mixed greens  
¼ pear, sliced very thinly  


1. To make vinaigrette, whisk together apple cider vinegar, mustard, olive oil, salt and pepper and set aside. 
2. To make croutons, scatter crumbled blue cheese on top of cubed bread and toast until brown.  
3. To make candied walnuts, blanch walnuts in water for 30-45 seconds and immediately toss in sugar and a dash of salt until coated. Fry until sugar has melted and lightly browned  
4. Lightly fry CDO Holiday Ham. 
5. To make salad, toss greens in vinaigrette. Add pears and CDO Holiday Ham, top with candied walnuts and blue cheese croutons. Add freshly cracked black pepper on top.
