CDO Holiday Ham with Pineapple Salsa


2 cups fresh pineapple, chopped  
1½ cups apple, chopped
2 oranges, peeled, sectioned, and chopped  
¼ cup fresh basil leaves, snipped  
2 tbsps. onion, finely chopped  
2 tbsps. lime juice  
1-2 tbsps. canned red jalapeno peppers, chopped  
¼ tsp ground cumin  
⅛ tsp. pepper
1 CDO Holiday Ham

1. For the salsa, in a large bowl, combine pineapple, apple, oranges, basil, onion, lime juice, jalapeno peppers, cumin, and pepper. Cover and refrigerate.  
2. Place CDO Holiday Ham on a rack in a shallow baking pan. If desired, score the top in a diamond pattern. Insert a meat thermometer.  
3. Bake, uncovered, in a 325˚ F oven for 1 ½ hours.  
4. Serve the chilled salsa together with the CDO Holiday Ham.
