CDO Holiday Ham with Cherry Salsa


1 cup cherries, sliced
¼ cup fresh basil leaves, snipped
2 tbsps. red onion, finely chopped  
1 tbsp. lime juice  
½ tbsp. jalapeno peppers, chopped  
½ tbsp. canola oil
1 CDO Holiday Ham  
2 tbsps. sugar
½ tbsp. cinnamon  
2 tbsps. water


1. For the salsa, in a large bowl combine cherries, basil, onion, lime juice, jalapeno peppers and canola oil. Cover and refrigerate.
2. Place CDO Holiday Ham on a rack in a shallow baking pan. If desired, score the top in a diamond pattern. 
3. In a small bowl, combine sugar, cinnamon and water. 
4. Brush CDO Holiday Ham with the cinnamon syrup then bake the ham uncovered, in a 375˚  F oven for 10 minutes. 
5. Serve the chilled salsa together with the CDO Holiday Ham.
