Chicken Galantina
Key Ingredients:
1 whole chicken, deboned
2 tbsp calamansi juice
2 tbsp soy sauce
250g ground pork
250g CDO Regular Sweet Ham, chopped
1 cup CDO Vienna Sausage, sliced
2 eggs
1/2 cup olives
1/2 cup pickle relish
1/2 cup cheese, grated
3 eggs hard cooked
1 tsp salt
1/4 tsp pepper
Procedure:
Marinate chicken in calamansi and soy sauce. Combine the rest of the ingredient. Stuff chicken with the meat mixture through the cavity. Wrap chicken tightly in cheese cloth. Steam for 1 hour over medium heat or baked in an oven for 40 to 45 minutes. Maybe served with gravy or mornay sauce.

Cream of Celery and Ham Soup
Key Ingredients:
1/4 cup margarine or butter
1/2 cup onion, sliced
1/2 cup celery, chopped
1/4 cup flour
4 cups chicken broth
250g CDO Regular Sweet Ham, diced
1 cup all purpose cream
1 tsp salt
1/4 tsp pepper
Procedure:
In a sauce pan, melt margarine or butter. Saute onions and celery. Add flour and stir until foamy. Gradually add the broth stirring constantly. Add CDO Regular Sweet Ham and all purpose cream. Add salt and pepper. Ladle into soup bowls and serve hot.

CDO Ham, Cheese and Corn Salad
Key Ingredients:
250g CDO Regular Sweet Ham, cut into strips
1 cup cheddar cheese, cut into strip
2 cups cooked corn
1 cup red bell pepper, cut into strips
1 1/2 cups mayonnaise
2 tsp salt
1/2 tsp pepper
Procedure:
In a salad bowl, combine CDO Regular Sweet Ham, cheese, corn and red bell pepper. Set aside in a chiller. In a separate bowl, whip mayonnaise with salt and pepper. Pour mixture over chilled salad. Toss gently. Chill until ready to serve. Arrange ham and cheese on top of bread.

CDO Ham and Cheese Quesadillas
Key Ingredients:
250g CDO Regular Sweet Ham
1 1/2 cups quick melt cheese, grated
6 pieces 8 inch flour tortillas
Procedure:
Top 3 flour tortillas with cheese and CDO Regular Sweet Ham. Cover with the remaining tortillas. Heat a griddle or non-stick pan. Brown tortillas on both sides. Remove from heat and divide into 8 triangles. Serve warm with sour cream or salsa.
*** Makes forty eight (48) servings.

CDO Open Faced Hawaiian Ham Sandwich
Key Ingredients:
4 slices white bread, toasted with butter
4 slices CDO Regular Sweet Ham
4 pieces pineapple ring
4 pieces green bell pepper ring
4 tbsp sugar
2 tbsp cooking oil
Procedure:
Dredge ham in sugar and lightly fry in oil. Do the same with pineapple and bell pepper. Place ham on bread, top with pineapple ring and bell pepper. Serve with fruit juice.
