CHICKEN GALANTINA
Key Ingredients:
1 whole chicken, deboned
2 tbsp calamansi juice
2 tbsp soy sauce
250g ground pork
250g CDO Regular Sweet Ham, chopped
1 cup CDO Vienna Sausage, sliced
2 eggs
1/2 cup olives
1/2 cup pickle relish
1/2 cup cheese, grated
3 eggs hard cooked
1 tsp salt
1/4 tsp pepper
Procedure:
Marinate chicken in calamansi and soy sauce. Combine the rest of the ingredient. Stuff chicken with the meat mixture through the cavity. Wrap chicken tightly in cheese cloth. Steam for 1 hour over medium heat or baked in an oven for 40 to 45 minutes. Maybe served with gravy or mornay sauce.
